AKA Taramisu
Just in time for Valentine's Day and Chinese New Year, here's a crowd pleasing favourite that will definitely charm your loved ones. Fun story, I tried recording this recipe in short snippets to post on Tiktok, but it was so challenging you'd be surprised. Hope I can still post it soon :P

There are two versions of this, an Easy one and an Advanced one. The difference between these 2 recipes is in the cream. The easy one is extremely straightforward, and you can probably make it within 30 minutes. It only calls for mixing mascarpone cheese with whipped cream to make a light and fluffy cream filling. The advanced one requires a little more work, but the added depth of flavour is incredible. It involves preparing a zabaglione (akin to a sweet custard) which makes the cream filling fabulously rich. Trust me when I say it's worth the effort.
Let's start off with the easy tiramisu recipe. The first step is to make the cream mixture.
Easy Tiramisu Recipe
Serving size: one 5" x 7" container, around 8 people
Cream:
250g mascarpone cheese
1 tbsp alcohol
30g icing sugar, sifted
200ml heavy cream (cold)
Instructions:
1. Into a large mixing bowl, add your mascarpone cheese, alcohol and icing sugar.
2. Use a whisk to mix the ingredients together until they are smooth (there should be no clumps).
3. In a stand mixer or using a hand mixer, whip your heavy cream on high speed until it reaches stiff peaks.
4. Use a spatula to fold the whipped cream into your mascarpone mixture until they are well combined. Taste it, and add more alcohol or sugar to your liking. Set aside.
Advanced Tiramisu Recipe
Serving size: one 5" x 7" container, around 8 people
Cream:
2 egg yolks
30g sugar
1 tbsp alcohol
250g mascarpone (cold, straight from fridge)
80ml heavy cream (cold)
Instructions:
1. Prepare a Bain Marie. Set it to the lowest heat setting so your water is simmering and not boiling.
2. In a small mixing bowl that fits over your Bain Marie, add your egg yolks, sugar and alcohol. Whisk to combine.
3. Place it over your Bain Marie and keep whisking vigorously. Make sure the egg yolks do not scramble. How I do this is by regularly removing the bowl from the Bain Marie so it never gets too hot. (For visual reference, here is a helpful YouTube tutorial by Chef John from Food Wishes)
4. Once your egg mixture has thickened slightly, remove your bowl from the heat. Add in your mascarpone cheese and whisk it together until combined. The cold mascarpone cheese will cool down your custard mixture.
5. In a stand mixer or using a hand mixer, whip your heavy cream on high speed until it reaches stiff peaks.
6. Add your mascarpone mixture into the whipped cream and whisk to combine.
Now that your cream mixtures are ready, we can move on to the assembly of our dessert.
Assembly
12 lady fingers (I used this brand, you can usually find it at the biscuit section of supermarkets)
Coffee dip:
100g strong coffee
2 tbsp alcohol (rum/baileys/kahlua/cognac/vin santo will all work. I used Baileys)
Instructions:
1. Combine your coffee and alcohol in a bowl large enough to dip your lady fingers into.
2. Dip 6 of your lady fingers into the coffee dip (I dip them quickly twice on each side) and lay them onto your prepared container.
3. Pour half of your cream mixture over and even out the surface. It's alright if it isn't perfect.
4. Repeat step 2.
5. Pour the other half of your cream mixture over and this time try to even it out cleanly as this is the top layer of your tiramisu.
6. To decorate, dust the entire surface with cocoa powder. You could also top it with chocolate shavings, melted chocolate, chocolate syrup or anything you have on hand. Get creative! I placed some Ferrero Rocher chocolates on mine.
7. Chill until ready to serve. Enjoy with your loved ones!
Note:
You can also prepare this in individual containers/ramekins/cups/wine glasses as I did! I do it by pouring some cream into the base, layering with dipped lady fingers, then pouring more cream over to cover.
