Cream Cheese Pound Cake

Hi everyone, here's another recipe to add to your collection of classic, easy, basic bakes!
Everyone loves a good buttery pound cake. However, this one has a secret ingredient that lends a slight tang to the simple flavour profile of a classic pound cake. Another unique thing about this recipe is that it doesn't have any baking soda or baking powder, meaning that the rise is completely attributed to the incorporation of air when creaming the butter and sugar together (Translation: Don't get lazy during the creaming process!).
This cake is not light and fluffy (recipe for another time), but really more of a buttery and rich pound cake.

Cream Cheese Pound Cake Recipe
Serving size: 1 small loaf cake

Ingredients
113g unsalted butter, room temperature
75g cream cheese (I used Philadelphia)
120g fine or caster sugar
1/4 tsp salt
2 eggs
1 cup all purpose flour
Additional toppings (optional)
Instructions
1. Preheat oven to 180˚C. Prepare a loaf pan and line with parchment paper or butter thoroughly so your cake doesn't stick.
2. Sift flour into a separate bowl and set aside.
3. In a large mixing bowl, mix butter and cream cheese together until well incorporated for about 1-2 minutes. It should be creamy with no chunks.
4. Add in your sugar and salt. Cream together for 3-5 minutes until light and very fluffy. The lighter and fluffier your mixture, the lighter and fluffier your cake.
5. Add in your eggs one at a time and mix until just combined.
6. Add in the flour in 2 batches, mixing until just combined.
7. At this point you can add in any additional toppings such as chocolate chips, blueberries, raspberries, or anything you desire. For this cake I threw in some frozen raspberries.
8. Pour the batter into your prepared loaf pan and run a knife through the batter to get rid of any large air bubbles.
9. Bake for 55-60 minutes or until a toothpick stuck inside comes out clean with only a few crumbs.
10. When done, let cool for 10 minutes in the pan before transferring to a cutting board or wire rack to cool until room temperature.
Additional notes: You can top with powdered sugar, chocolate glaze, icing sugar glaze or anything you desire! Loaf cakes are meant to be dressed up to your liking so go wild.
