CNY Almond Cookies Recipe

It's day 1 of Chinese New Year today for all those celebrating! Public holidays mean another opportunity to get baking! Today I'm sharing my favourite CNY cookie recipe. It's a delicious balance of sweet and savoury, crunchy and crumbly. The only downside of this cookie is that it contains nuts so my allergic self can't enjoy it...

CNY Almond Cookies Recipe
Serving size: 1 container

Ingredients
60g ground almonds
90g all purpose flour
60g caster sugar
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
60g canola oil
Egg wash (beaten egg mixed with some water)
Sliced almonds, for topping
Instructions
1. Preheat oven to 175C. Line a baking tray with parchment paper.
2. In a large mixing bowl, whisk your ground almonds, flour, sugar, salt, baking powder and baking soda together.
3. Pour in your oil and mix together until you get a sandy mixture.
4. Roll them into 7g balls using your hands.
5. Brush with egg wash, then top each ball with a sliced almond.
6. Bake for 15-20 minutes or until nicely golden brown.
7. Pack into those red lid containers and seal with scotch tape. Make your relatives really happy!
