Easy CNY Cornflake Cookies Recipe

With Chinese New Year fast approaching, I wanted to share some easy recipes for you guys to try out. I love watching the stories of you guys trying out my recipes, so I hope that with the CNY holidays coming up maybe you might have some time to do some baking!

Cornflake cookies are a family favourite in my family. Something about the crunchy exterior with a buttery sweet chewy interior seems to strike a chord in our hearts. Once again, this is a very simple recipe with minimal ingredients, definitely doable with no fancy equipment.
Time to dive right into the recipe so you don't have to scroll any more :P
Easy CNY Cornflake Cookies Recipe
Serving size: 20-22 cookies
Ingredients
100g unsalted butter, room temperature
110g fine or caster sugar
2g salt
1 tsp vanilla extract (optional)
1 large egg
120g all purpose flour (you can also use gluten free alternatives like rice flour or oat flour here. I happened to use oat flour in these pictures)
40g cornflakes, crushed
about 1 cup more cornflakes crushed for rolling
Instructions
Beat the butter, sugar and salt together in a standing mixer until light and fluffy, as seen in the first picture below.. Alternatively, use a large mixing bowl and a whisk to beat the ingredients together by hand.
Add in the vanilla extract and egg and beat until just combined.
Sift in your flour and cornflakes. Beat until combined. Dough will look like the second picture below.

Preheat your oven to 175C. Line a heavy-bottom baking tray with parchment paper.
Scoop out dough using your hands then roll it in the additional cup of crushed cornflakes to coat. Coat generously as the cookies will spread in the oven.
Place the coated balls of dough onto the baking tray, spacing them about 1 inch apart.
Bake the cookies in the heated oven for 16 minutes or until nicely golden brown. (This timing will depend on the size of your cookies as well as the heat of the oven. Keep an eye on them until they are the desired colour!)
Let cool for 5-10 minutes as they will be soft out of the oven and need to cool to crisp up.
Now make your family and extended family's tummies very happy.
